Filipino cuisine shines on the global stage as two proud graduates of La Salle Green Hills (Batch 2009), Chef Thirdy Dolatre and Chef Kevin Navoa, achieve a milestone for the country. Their restaurant, Hapag, has been awarded One MICHELIN Star, one of only eight establishments in the Philippines to receive this prestigious honor in the inaugural MICHELIN Guide for the country.
Hapag began as a private dining concept in 2017 and has since evolved into a celebrated dining destination, now located at The Balmori Suites in Rockwell, Makati. Alongside Hapag, the duo also introduced Aya by Hapag, which earned recognition as MICHELIN Selected, joining 74 distinguished establishments in the guide.
The journey of Thirdy and Kevin reflects a shared vision rooted in Lasallian values of discipline, camaraderie, and service. Their partnership, forged during their formative years at La Salle Green Hills, has grown into a culinary enterprise that champions Filipino flavors and culture. At Hapag, they have cultivated a kitchen ethos that prioritizes mentorship, teamwork, and excellence, creating a space where success is shared and opportunities abound for aspiring chefs.
Beyond the MICHELIN Guide, Hapag has garnered accolades from Tatler Dining, the Inquirer Lifestyle Food Awards, and earned a spot on the 50 Best Discovery list as one of Manila’s standout restaurants. These achievements underscore their commitment to elevating Filipino cuisine on the world stage while staying true to their roots.
The story of Thirdy and Kevin is a testament to how Lasallian education shapes leaders and innovators across industries. Their success reminds us that learning more in school becomes being more in the world, carrying forward values that inspire and create impact far beyond the classroom.
